Forbesbooks Forbes Magazine What kind of cheese do professional pizzarias use? i've been using plain mozzarella and it just turns into a single big piece when it cools causing it to fall off the pizza. I've been working on my technique for cast iron pizza, and most of my pizzas are pretty basic and straightforward in terms of toppings. we mostly do pepperoni and occasionally some basil or garlic, but when it comes to cheese, i find low moisture mozzarella which seems to be the choice for almost every recipe pretty boring and relatively bland.

Pizza toppings are what add flavor and make the dish unique. a cheese pizza is like taking all the paint and brush strokes off a canvas, putting it on the wall, and calling it art. Which extra cheesy pizza do you prefer?wow! i’m not surprised tuscan 6 cheese wins, but i love both pizzas. i love alfredo, so i don’t understand all the hate for it. Cheese pizza is the golden slice. it represents purity. fully loaded pizza has its place and can be so many wonderful things but it’s not cheese pizza. cheese pizza is how you compare pizza places, if they have a good cheese slice everything else follows. cheese pizza emphasizes the fundamentals and should not be blatantly disrespected like you’re tying to here. For basic oven baked homemade pizza i go to the deli counter and get sliced provolone and sliced mozzarella and shingle them around the pie. also typically get sliced pepperoni from the deli counter too if i don't have good dried salami or pepperoni to use.
